Vanilla or Vanilla 2?
I've to use a forum/community like Vanilla. Mostly because of the look and feel I favour Vanilla 2 
If I get the code from Git for my production site, will I then later be able to update the Vanilla 2 to e.g. the release candidate and the final version?

You can also (regularly) do git pull to update.
But better to have a staging site prior to install on production.
