When you, the Administrator, send email to your users it will be addressed from "name" and "address". You can determine what the "name" and "address' will be by simply filling in the appropriate fields on the Outgoing Email page.

If you are familiar with SMTP you can configure the Outgoing Email to use a separate SMTP server by checking the "Use an SMTP server to send email" check box.
